Kinky Black Garlic Tzatziki

Rediscover Tzatziki with this aromatic, refreshing and slightly sweet version of the classic Greek condiment.
Use it with any kind of grilled meat, especially roasted lamb, and practically with any fried meatball or fried vegetable, e.a. zucchini sticks or Falafel.

Ingredients:
1 cucumber with outseeds, skin on, grated
300 gr Greek yoghurt
30 gr sharp extra virgin olive oil
30 gr distilled red dry vinegar
1 teaspoon chopped dill
15 gr Black garlic paste
Salt and pepper to taste

Serve with grilled (or better charcoal grilled-and-slightly-burnt) bread slices

Sprinkle the grated cucumber with the salt, mix and leave for 5 minutes. Gently squeeze the excess water without leaving the cucumber too dry.
Mix with the rest ingredients, adjusting the olive oil, vinegae, salt and pepper to taste.
