A staple recipe from Italy cooked with our Black Garlic. This is what some excellent raw materials and some imagination can do!! Enjoy


220 γρ spaghetti

70 gr salami in small cubes

80 grated gouda cheese

15 gr black garlic paste

15 gr butter

1 eggyolk

Chopped parsley

Salt and freshly ground pepper


In a bowl, mix the egg yolk with the black garlic paste an add the gouda cheese. Stir. Cook the spaghetti al dente, in 2,5 lt water with 25 gr salt, reserving 100 ml of the pasta water.In a pan, sear the salami with the butter until fragrant and add the pasta and the water. Bring to a boil , stir, and add the contents of the pan into the bowl with the egg yolk, paste and the gouda cheese. Stir until you have a smooth creamy sauce, and serve with freshly ground pepper and parsley
